2 pints blueberries
1 cup sugar
2 cups water
1/4 cup cornstarch
1 9" ready-crust
1 qt vanilla ice cream
2 tbs orange juice
In large saucepan, combine blueberries and sugar. Mix water and cornstarch together and stir into blueberry mixture. Cook at a simmer until sauce is thickened. Scoop out 1/2 cup of the mixture and set aside. Cool the mixture then spoon it into pie crust. Spoon ice cream over the top of that.
Beat the two tablespoons of orange juice into the 1/2 cup of blueberry mixture you had set aside. Drizzle this over ice cream and then put the pie it in the freezer. Remove 15 minutes before serving to thaw enough to cut. Cut into wedges to serve.
