2 lbs chicken breast, cubed or cut small.
3 medium leeks (sliced)
1 can corn
3 TBL unsalted butter
1 fresh jalapeno pepper (minced)
3 cups chicken broth - use low sodium it has more taste.
3/4 tsp. salt
1/4 cup freah lime juice
1 large ripe tomatoe cut up
3 tsp. Freah Basil (chopped)
In large saucepan, saute leek in the butter. Add Jalapeno, salt, broth, chicken and corn. Cook until chicken is done, 10 -15 mins. or so. Add lime juice, tomatoes and basil. Cook another 3 more minutes and serve over rice.
