Pasta Lavelle

1lb sweet italian sausage (removed from casing and crumbled)
4 cloves garlic
6 cups fresh spinach
2 tbs basil (fresh is best)
2 14 1/2oz. can stewed tomatoes (garlic & basil flavored)
1lb cooked pasta
pecorino romano cheese (or parmesian if you prefer)
salt and pepper



Brown garlic & sausage. Drain off the fat from the sausage when browned. Add basil, diced tomatoes and spinach. Add salt and pepper to taste. Simmer until the spinach is cooked. Serve over the pasta with pecorino romano cheese.

Note: I have also added mushrooms and an onion to this recipe with wonderful results
