1 lb dry beans (red or your choice)
1 lb polish sausage, cut into 1/2 inch slices
6 cloves garlic, minced
1 medium onion, diced
1/2 red or green pepper
1/2 cup chopped celery
1/4 tsp salt
1/4 tsp crushed red pepper
1 tsp thyme
1 tsp oregano
Add 3 cups of water to beans in a large pot and bring to a boil. Reduce heat and simmer for 2 minutes. Cover and let stand for 1 hour. Drain and rinse beans and put back in the pot with 3 cups of water. Add garlic, onion, green/red pepper, celery, salt, crushed red pepper, thyme and oregano and bring to a boil. Reduce heat, cover and simmer for approximately 90 minutes or until beans are tender (may add more water if necessary). Add sausage and simmer until sausage is hot and sauce thickens.
May serve over rice if desired
