Shrimp Stir Fry

1 1/2 lbs asparagus, cut into 2in pieces
1 1/2 lbs of shrimp
1 large onion, chopped
1 tbsp sesame seeds (optional)
3 tbsp soy sauce (Kikomon is best)
1/3 cup oil
1 1/4 tsp salt



In a pan, toast the sesame seeds until browned and remove from heat.

Heat oil. Cook asparagus, onion and shrimp on medium heat until shrimp turns pink and veggies are tender-crisp (approx. 5 minutes), stirring frequently. Stir in sesame seeds, soy sauce and salt and mix.

May be served over rice or, if on a low carb diet, in a bowl by itself.
